Bacon & Spinach Quiche

INGREDIENTS:

One deep-dish, ready to use, pie crust, 8 slices of bacon, cooked and chopped, 1/4 cup onion, chopped, 4 large whole eggs (beaten),  2 large egg whites (beaten), 1 cup half and half, 1 cup mild Swiss cheese (shredded), 1/2 cup Cheddar cheese (shredded), 3/4 cup Parmesan cheese (shredded, divided), 10 ounce bag of chopped frozen spinach (thawed & drained)

PROCESS:Preheat oven to 350°F. Bake unfilled pie shell according to package. In skillet, cook bacon, reserve drippings. Remove bacon, sauté onions in drippings then set aside. In large bowl, mix well whole eggs, egg whites, half and half, Swiss, Cheddar, and half of Parmesan cheese. Add drained spinach, onions, bacon, and stir well. Pour into pie shell, sprinkle remaining parmesan on top. Line baking sheet with foil to catch spills. Bake approximately 45 minutes, until center is firm. Let stand 10 minutes before serving.
